Updated Bûches de Noel

The traditional Christmas dessert in France is the  Bûche de Noël or yule log. It is a rolled sponge cake iced with chocolate to resemble a log, dusted with powdered sugar snow, and scattered with meringue mushrooms to add to its woodsy charm. It has been a Christmas staple since the 19th century.

Here are some innovative bûches de Noël by pastry chefs who are tired of the old fashioned rustic logs.
