Pass the Pimento Cheese, Please.

Pimento cheese is not a staple here in Canada but when I was a kid Kraft produced Cheez Whiz with pimento. My mother, believing that this red speckled version was ever so much more exotic than run-of-the-mill Cheez Whiz, would serve it on celery sticks and make sandwiches with it for our school lunches. It not only made me gag, it made me puke, it made me throw my lunch in the garbage. I hated the stuff! I hated it so much it turned me off plain Cheez Whiz as well. This was unfortunate as my mother's lunchbox repertoire was limited to Cheez Whiz or peanut butter. My fierce hatred of the pimento doomed me to what seemed like an endless lifetime of peanut butter sandwiches. I hate those now too. It is my belief that I would still enjoy both peanut butter and Cheez Whiz if my mother had not introduced the pimento to my school lunches.

That said, the documentary below shows folks singing the praises of pimento cheese (which I'm sure is much better than processed cheez food with red speckles).

  3. I got mine at Publix. They make a pretty god version. Not at all cheez whizish.

    It's good stuff but you need to make your own. Aged Canadian cheddar is much better than the American stuff, too. Cheese, mayo, and pimentoes (from a jar). Use roasted peppers instead? Sure, especially if you roast your own. A drop or several of tabasco? You bet or cayenne or what have you.Maybe some mustard. Some people add pickles or relish but I say Meh. Anyway, do it youself and make it your own. Pimento cheese is really good as a grilled cheese sandwich. I grew up in the southern US and didn't realize this was a regional specialty until I moved away.
