Modernist Striped Omelet

I make yummy, fluffy omelets in a Calphalon frying pan but obviously I've been doing it wrong. Chef Maxime Bilet makes this semi-surreal omelet look easy but who has silpats, a pastry comb and an industrial looking gas canister kicking around their kitchen? I must admit I'm intrigued though.

  1. In 1975, Shirley Conran, (Now Lady Shirley Conran) published her book "Superwoman". It was based on the simple precept that women were expected to be good at cooking and housework, and all the crap that gets in the way of the things they really wanted to do. So she wrote a book , "Superwoman", which was subtitled "How to Cheat at Housework".
    Now, think back to 1975, and, indeed, you realise, that there's so much more to do in life than hole-up in the kitchen producing perfect stuffed mushrooms.
    Shirley, of course, could afford to cheat, by getting people like your video's little munchkin to stuff her mushrooms and fluff up her canapes, Hell, I daresay she could afford to have him serve-up a whole tableful of striped omelettes from his nitrous-oxide boosted space-kitchen.

    I'd just say chuck it in the pan, get it hot, eat it, and believe me, your tastebuds won't notice that there are no stripes. And no, I'm not going to go to a health-food store to buy powdered freeze-dried egg white and yolk separately to make my mushroom mush. good grief, get a life.

    The best meals of my life have rarely been the prettiest, the prettiest meals of my life (and the most expensive) have universally been a disappointment.

  3. Napkins? Oh my, you're a highfalutin gal, round here we just tear paper-towel off the roll, and we lick our fingers too.

  4. Funny, I actually have a pastry comb and gas canister... what I'm not willing to do is cut up a $25 silpat just to fit the pan.

    I've seen a video of Nathan Myhrvold (the other author of Modernist Cuisine where this recipe is from) doing this recipe and he just uses the entire silpat and cut out a circular piece of egg/mushroom after.
