I have been thinking of you and peaches for over a week! We would get two bushels (sp?) and have them all year. Mom (with a lot of peelers and pitters) would arrange and freeze them in a pie plate. After they were frozen we would pop them in a bag and all winter bake pies. (No defrosting - no tapioca, fruit is still nicely firm and hasn't boiled over.) Tried and true and the stuff of memories.
