Susumu Yajima's Ten ‘Commandments’ of Sushi Illustrated by Chie Ushio


Chef Susumu Yajima and his wife have run their sushi-ya in Tokyo together for almost 34 years. The story of his life, and this place, is encapsulated in his Ten Commandments of Sushi. 



Some are rudimentary and fairly common; others are unique to him; still others recall sushi’s origins as Edo-era street food.
